Chicken Salsa Casera Quesadillas

The authentic flavours of our HERDEZ SALSA CASERA® shine in this tasty quesadilla recipe. Serves dinner for 6 or cut them into smaller pieces for an easy appetiser.

INGREDIENTS

2 tablespoons olive oil, separated
600g chicken breast, diced
1 red capsicum, diced
1 white onion, diced
3 tablespoons butter
6 burrito-style flour tortillas
3 cups shredded cheddar cheese
3 cups shredded mozzarella cheese
1/2 cup HERDEZ SALSA CASERA®

DIRECTIONS

1. In a large pan, over medium-high heat, cook chicken in 1 tablespoon of olive oil until golden and cooked through.
2. Remove the chicken from the pan and add the remaining tablespoon of olive oil and cook capsicum and onions for 5 minutes.
3. Use butter to grease a griddle pan and one side of each tortilla.
4. Place the tortilla butter-side down onto the gridle plan and add equal parts cheese, chicken, capsicum, onions and a drizzle 2 tablespoons of Herdez Salsa Casera on top of each tortilla. Fold the tortilla in half and cook over medium heat for about 5 minutes, flipping halfway.
5. Cut quesadillas and drizzle additional Herdez Salsa Casera and sour cream over the top; sprinkle with coriander.
