Verde Steak Fajitas

INGREDIENTS
1-pound flank steak
Salt and pepper
1 bottle HERDEZ Salsa Verde
1 tablespoon olive oil
1 red onion, sliced
2 capsicums, sliced
1 lime, juiced
1 tablespoon fajita seasoning
8 fajita style flour tortillas
GARNISH
Crumbled Feta cheese
Coriander
Prep Time: 2 hours, 10 minutes
Cook Time: 20 minutes
Total Time: 2 hours, 20 minutes

DIRECTIONS
1. Season steak with salt and pepper, then add to a large plastic bag. Pour in HERDEZ Salsa Verde and seal the bag. Make sure the meat is coated in sauce, then refrigerate for 2 hours.
2. In a large skillet, heat oil over medium-high heat. Cook steak for 8-10 minutes, flipping halfway.
3. Remove meat and let it rest in foil. Add onion and capsicum to the same skillet. Add remaining HERDEZ Salsa Verde from the marinade bag and add lime juice and fajita seasonings. Cook over medium-high heat for 5-10 minutes.
4. Slice steak and serve with the capsicum and onions in a tortilla with crumbled cheese and coriander on top.
